En el corazón de la colonia Roma Norte en la Ciudad de México se encuentra PARGOT, un restaurante de 10 m2 que amalgama la cocina de mar con la arquitectura tradicional de la colonia, el diseño de interiores reinterpreta el movimiento arquitectónico ArtDeo de los 20`s tomando como eje rector del diseño la simetría. Al frente del local se encuentra el área publica compuesta por dos periqueras y barras altas que se abocinan para albergar a cuatro comensales. El piso, los lambrines bajos y las barras los están compuestas por micro terrazo de concreto blanco con piedras azules, amarillas y grises hacen un guiño a las playas y conchas que reposan sobre la arena. Los muros tienen un cambio dramático de materiales acentuado por una buña dorada de latón que oculta una fuente de luz que baña el muro texturizado con bambú que proyecta las betas de la planta y las sombras emitidas desde abajo. Detrás de las barras se encuentra una pequeña cocina industrial dividida por área fría y caliente enmarcada por un muro compuesto por dos arcos y sus puertas corredizas de latón que al parpadear provocan un cambio de atmosfera haciendo una transición de dorado a azul marino haciendo nuevamente un guiño al mar.

Pargot is a small neighborhood restaurant, but it packs a punch. The menu is unique and it shows the creative talent of the chef (who we met at the very end of the meal). The fish tostada is better than what you can get at Entremar (which is already very good). The lamb (a new addition to the menu, from what I hear) is also fantastic. I would go with 2-3 friends and order 3-4 dishes each (they are small) so you can taste the entire menu. They have good wines and Mescal, but do not have a full bar. Also, all the seating is outside so bring a jacket if you tend to get cold. And be prepared to wait - this place is excellent, and it has a following amongst the foodies of CDMX.

There are few vegetarian options, but it would help if you eat fish at least.

We discovered this place from visiting the tacos stand the night before. We had booked at another restaurant for dinner but after seeing their menu we cancelled our reservation and booked at pargot. We were lucky enough to sit at the chef's table. It goes without saying that this was one of the best meals I've ever had. The dishes were creative without being pretentious. It showed they wanted to keep fundamental dishes and elevate them with unique flavours and presentation. I was mind boggled how they even came up with these combinations. My recommendation is tell them how hungry you are and let them decide. You won't regret it. Also don't miss out on the wine, it's truly fantastic and accompanies the dishes beautifully. They are just 3 weeks old so you can still get a table, but I'm not so sure that will be the case 6 months from now. We will be back next year when we visit Mexico City again.

Recientemente fui a Pargot con unos amigos y debo decir que quedé realmente sorprendido. Normalmente, no soy fan de la comida de mar, pero increíblemente terminamos pidiendo toda la carta. Hay varios puntos que quiero mencionar: 1) El lugar es pequeño pero muy especial, tiene un diseño muy bonito y la cantidad de mesas perfecta 2) Los platillos son muy diferentes a lo que puedas encontrar en cualquier otro lugar, felicidades al Chef Alexis. 3) Dentro de todos los platillos que probamos, yo recomiendo las tostadas, el risotto y el flat bread. (No recuerdo los nombres completos) 4) Los precios están corresponden completamente a la calidad de platillos que recibes. Sin duda es un lugar que estaré visitando cada vez que vaya a la CDMX. Una explosión de sabores impresionante. Pensando que es restaurante de autor, probarás las ideas más creativas y el twist a platos tradicionales. Tanto el chef como el staff cuidan tu experiencia de principio a fin, y te anticipan cómo degustar cada uno de los platillos, que traen, como lo hacen, la técnica. Es muy interesante. Pedí el menú de degustación para vivir la experiencia completa y no me arrepentí. De mis favoritos la tostada de rockot, flat bread, risotto y el postre cítrico. Una delicia en verdad. Lo que pagas es lo que recibes sin duda. Si estás buscando una experiencia culinaria completa en cocina de mar, diferente, creativa, exquisita: aquí es. Bueno para el date con alguien o date contigo.

Incredible food— one of the top 5 meals of my life! The prices were very reasonable and sitting outside was pleasant. One star off because the service was just bad. I had to ask three times for water. One of the times the server forgot and the other two times he acted like he was just too busy to be bothered, even though there were four tables. He clearly did not know how to pour wine because my glass only was a few sips (for $195) and my husband’s was noticeably fuller. Finally, at the end he prompted us for a tip, which is not standard in our experience in Mexico. I’d go back in a heartbeat and hope for a different and better server.

Amazing dining experience at the chef’s table, where Chef Alexis takes you through a guided journey of the fabulous meal ☺️ Every dish feels well thought out and crafted with love with plenty of gluten free options. My favorites are kebbe crudo de pescado, tostada de jurel, and risotto con bisque de jaiba adobada y callo de hacha. The menu is updated regularly. You can tell that Chef Alexis & his team takes great pride in their creations, and it really shows in the amazing flavors. Highly recommend making a reservation at the chef’s table. The seating is tiny but it’s a lot of fun plus you’ll get to make a new friend! P.S. Taco next door (also by Chef Alexis) is one of the best - ever!

We went to so many highly rated restaurants around Mexico City during our trip and Pargot, with its humble 4 tables on the sidewalk, was leagues above the rest. We ordered the entire menu, which worked out as the perfect tasting menu. The chef talked with us and gave us great recommendations. We loved it so much we are going back on our last night of the trip because I don't think I could forgive myself if I didn't try his taco restaurant next door and missed a chance to eat his lamb dish again.

Una joya dentro de la Roma. Tuve la oportunidad de probar diferentes platillos y honestamente me quede sorprendido con la calidad de sus alimentos y la presentacion. El chef Alexis es muy atento y se da la oportunidad de irte a platicar que es lo que te preparo y de terminar de adornar algunos platos dentro de tu mesa. Sin problemas lo recomendaria con cualquier persona. Las tostadas no tienen comparación y son algo que de verdad deberian probar, probablemente una de las mejores tostadas que he probado. Por ultimo no dejen de probar el vino blanco, se acompaña delicioso con toda la comida.

This is what love of food looks like. They only have four tables on the streets. Love seeing the way kitchen prepared food. So much care into the foods.The results is amazing. Every elements are very well balanced. Flavors are complementary with each other. Every plate is an art. Prefect is the only way to describe it. We had the pleasure to speak with the Chef. Visitamos Pargot y descubrimos una joya escondida. La calidad de los alimentos y el ensamblaje de los platillos alegró bastante a nuestros paladares. El menú es corto, por lo que recomiendo probar todos los platillos y repetir los que más les gusten. El único platillo que no nos encantó fue el postre, el resto estuvieron de 10. Alexis crushed it again. Great food from a great chef. The inside is tiny and really cool. It has two benches looking into the kitchen. The outside seating area is cool and feels very Mediterranean. Food is mexican/Mediterranean. Lots of fish dishes and creations. The menu is going to change with the seasons so always a good reason to go back. Pro tip: once you finish dinner grab a taco next door at Alexis's taco spot.

I accidentally stumbled upon Pargot when trying to go Tacos Los Alexis. I’m a big fan of the taco joint Alexis has created so when I found out the spot next door was his newest venture I had to sit down and try. It’s fine dining seafood dishes + casual seating. Presentation was beautiful and the food was great. Would definitely recommend to my friends who enjoy trying new places.

Really great place! The guys are super nice, and they really want to show you some interesting local food (and wines). I had some remarks (for example one of the was too sweet for me), but a really great overall experience. With lot of hard work this team can be a really amazing one in the near future! Hope to try it agaian in a few years time when i'll be back to Mexico City.

Amazing food and team. We ordered Kebbe Crudo de Pescado, Tostada de Jurel, and Risotto Bisque de Jaiba Adobada. Absolutely highest recommendation for the tostada (see photo) Just a heads up that the menu changes around every 3 months, but I trust that they will not disappoint.

Man o man, what a night. It’s a small place, but the food is big in flavour. It has been a while since we have eaten at a place with such a good price/quality ratio. Vas caminando por la banqueta y está gente ponen sus mesas sillas ahí ocupando toda la banqueta, obstrucción total hay que bajarse del lado de los carros, que gandallas. Se creen dueños de la calle. Aparte mucha inconsistencia pasan con los platos calientes dejándolos caer a la gente que pasa por ahí .

This was an amazing experience. Laid back fine dining with excellent service. We had one of each dish on the menu and the food was a treat for our senses. The chef and servers explained each dish to us in detail which only added to our appreciation for each plate.
